On a wintery weeknight, this hearty, healthy meal will warm you up

Ingredients

2 tbsp (30mL) Oil + little more for garnish
3 tsp (15mL) Bottled minced garlic
1 Can (19oz/540mL) kidney beans or mixed beans, drained and rinsed
5 cup (1-1/4L) Water
1 Can (125mL) penne or other small pasta

Instructions

In a large pot, heat oil over medium heat. Add garlic and cook for a few minutes until garlic is fragrant. Add water, tomatoes, and juice. Increase heat to high and bring to a boil. Boil for 5 minutes.
In a small bowl, mash half the beans. Add mashed and unmashed beans to pot. Add pasta. Stir briefly. Bring back to a boil, then reduce heat and simmer until pasta is tender. Ladle into bowls and drizzle a little oil on the top of each serving.
Notes: A cup (250mL) frozen vegetables could be added to the simmering soup.
