Ingredients
1 Package (16oz/450 g) penne
2 tbsp (30 mL) oil
1 Medium onion, finely diced
1 tsp (5mL) bottled minced garlic
2 cup (500mL) cooked, peeled shrimp (or cooked ham)
1 Yellow pepper, seeded and chopped
1 Red pepper, seeded and chopped
12 Stalks asparagus, cut into bit-size pieces
1/2 cup (125 mL) dry white wine
Salt and pepper to taste
1 cup (250 mL) freshly grated Parmesan cheese
Squeeze of lemon
Instructions
Bring a large pot of salted water to a boil over high heat. Add pasta and cook according to package dire tigons until al dente.
Meanwhile, in a large pan heat oil over medium-high heat. Add onion and garlic and cook for 2 minutes. Add shrimp, vegetables, and wine. Continue cooking, stirring frequently, until vegetables are tender and liquid has reduced.
Drain pasta. Add pasta to the pan. Add salt and pepper. Stir and cook for 1 to 2 minutes, or until all the ingredients are hot. Add the cheese and lemon juice, and stir well.
Serve immediately.
