Canadian grocery stores stock many ready-made curry sauces. Experiment to find your favorite, then stock up for curry in a hurry anytime.
Ingredients
1 Pound (500 g) cooked, peeled shrimp
2 tsp (10mL) Bottled minced garlic
1 tbsp (15mL) Lemon juice
1 tsp (5mL) Salt
4 cup (1L) Curry sauce
1/2 cup (125mL) Carrots, grated
1/2 cup (125mL) Green peas
1/4 to 1/2 cup (60 to 125mL) Fish or chicken stock or water
1/4 tsp (1mL) Dry ginger
Instructions
In a bowl, put shrimp, garlic, lemon juice, and salt. Stir, and then set aside.
In a large pan or wok, heat curry. Sauce over medium-high heat. Add shrimp, marinade, carrots, and peas. Cook until shrimp are cooked through, adding stock as required. Add ginger. Stir. Serve.
