Ingredients
3 cup (750mL) Low-fat milk
1 Can (19oz/540mL) condensed cream of chicken soup
3/4 cup (180mL) Sharp cheddar cheese, per-shredded (or to taste)
2 cup (500mL) frozen mixed vegetables
1/2 cup (125mL) Frozen corn kernels
1 Can (16-1/2oz/184 g) salmon, drained, flacked, and skin and bones removed
Instructions
In a medium pot, stir together milk and soup over medium heat. Add cheese and stir until melted. Add frozen vegetables.
Increase heat to medium-high a d cook until soup almost comes to the boiling point, stirring frequently. Stir in salmon and continue to cook briefly until salmon is hot.
Serve.
Notes: A simple green salad with oil and vinegar dressing contrasts nicely with the creamy chowder.
