Take advantage of the prewashed greens found in your grocery store.
Ingredients
1 tbsp (15mL) Oil
1 Small onion, finely chopped
3 tsp (15mL) Bottled minced garlic
2 Stalks celery, finely diced
2 cup (500mL) Reduced sodium chicken stock
1 cup (250mL) Macaroni or other pasta
2 cup (500mL) Prewashed baby spinach or other greens
Juice of one lemon
1/2 tsp (2mL) Red pepper flakes
Salt and pepper
Precooked bacon or ham (optional)
Parmesan cheese for garnish
Instructions
In a large pan, heat oil over medium-high heat. Add onion and cook until softened. Add garlic and celery and cook a few minutes more, until garlic is fragrant and celery is tender.
Add stock. Increase heat to high and bring to a boil. Add pasta. Boil until pasta is al dente. Reduce heat to low, add spinach, and simmer for a minute or two. Remove from heat.
Add lemon juice, red pepper flakes, and salt. Stir briefly. Sprinkle individual servings with bacon or ham, if using, and cheese.
