Ingredients
SAUCE
1 to 1/2 tsp. 25mL Butter or hard margarine.
1 to 1/2 cup 375mL Sliced fresh mushrooms.
1 cup 250 mL Chopped onion.
25 oz 700mL Pasta sauce, preferably.
chunky, With garlic and onion
1 cup 250mL Mild salsa.
CHEESE FILLING
1 Egg white (large)
1 cup 250mL Low-fat cottage cheese.
(Less then 1% MF)
1/2 cup 125mL Grated Parmesan cheese.
6 Oven-ready lasagne noodles
1 to 1/2 cup 375mL Grated part-skim,
mozzarella cheese (35% less fat)
1/4 cup 60mL Grated Parmesan cheese.
Instructions
Sauce: Melt butter in large saucepan. Add mushrooms and onion. Sauté Until soft.
Add pasta sauce and salsa. Simmer, stirring often, for about 3 minutes. Remove from heat.
Cheese Filling: Mix egg white, cottage cheese and first amount of Parmesan cheese in small bowl. Set aside.
Assemble in ungreased 9 x 9 inch (22 x 22 cm) pan in layers as follows:
1/3cup sauce
3 lasagne noodles
1/2 cheese filling
1/2 remaining sauce
1/2 mozzarella cheese
3 lasagne noodles
1/2 cheese filling
Remaining sauce
Remaining mozzarella cheese
Parmesan cheese
Bake, covered, in 350°f (175°C) oven for about 45 minutes. Uncover. Bake 10 to 15 minutes more. Let stand 10 minutes before serving.
